Açaí Sauce for Fish

A great tasting sauce that can easily be served with almost any kind of fish filet.

- 1 tablespoon butter
- 1 large scallion
- 2 packs of Amafruits Pure açaí (thaw for 30-45 min)
- ½ tablespoon cornstarch
- parsley and salt to taste

In a skillet, place the butter and scallion chopped and let brown. Be careful not to burn the scallion as it may change the flavor of the açaí. When the scallion is light brown, add the açaí and stir. To thicken the sauce, add cornstarch dissolved in a little water. Add salt to taste. Pour the sauce over your favorite fish fillet and garnish with the parsley.
