Açaí Homemade Frozen Yogurt

Purple and delicious, you will be craving this one.

1 pack of Amafruits açaí berry purée (thawed)
1¼ cup milk
4 egg yolks
½ cup sugar
2 cups Greek yogurt, full fat
beans from 1 vanilla bean 


  1. In a medium saucepan dissolve 1/4 cup sugar and milk on low heat until steam rises. Remove from heat and add vanilla beans. Be careful not to boil.
  2. In a medium bowl or stand mixer, whisk the egg yolks and 1/4 cup of sugar until fluffy. Very slowly add the milk mixture into the egg mixture, about a quarter cup at a time whisking continuously to prevent curdling.
  3. Pour this mixture back into your saucepan and slowly raise the temperature and cook until the mixture is between 175-180 degrees.
  4. Let cool to room temperature and fold in yogurt and acai pulp. Cool the custard in the refrigerator for at least 4 hours. It's better if you chill it in the refrigerator overnight. For finishing touches, churn in an ice cream mixer according to manufacturer's directions.
