Açaí Cheesecake

Turn your cheesecake into an incredibly delicious exotic sensation.

12-16 servings

Topping Ingredients:
- 4 packs of Amafruits Pure açaí purée(thaw for 30-45 min)
- 6 tablespoons of sugar (light version - 4 tablespoon sugar 2 tablespoon stevia)
- 2 tablespoon of cornstarch

Cheesecake Ingredients:
- 3 (8 oz size) packages of cream cheese
- 1 cup of sugar (light version - 1/2 cup sugar and 1/2 cup stevia)
- 4 eggs
- 1 teaspoon of vanilla
- 2 cups graham cracker crumbs
- 1 tablespoon of sugar
- 4 tablespoons of melted butter

Preheat oven to 375ºF. To make the crust, combine graham cracker crumbs, sugar and melted butter in a medium bowl. Mix well. Spread evenly on bottom of a 9 inch cake pan, pressing lightly with fingertips. Then refrigerate while the filling is being prepared. For the filling, beat the cream cheese at room temperature until light, then add the eggs, vanilla, and 1 cup of sugar. Beat until well blended and light. Pour in the chilled crust and bake at 375ºF for 35-40 minutes. Cool the cheesecake before topping. For the açaí topping, combine the 4 packs of açaí with 6 tablespoons of sugar and 2 tablespoon of cornstarch over low heat until it becomes a very thick syrup. When the cheesecake is at room temperature, pour the topping over top and chill in the refrigerator until ready to serve.
